This summer, Oliver Dunne has created ten dishes for One Ballsbridge — and only One Ballsbridge. From July 1st through August 31st, these dishes will be on our menu every night, celebrating the very best of what Ireland produces right now.
Free-range suckling pork from Irish farms. Brown crab from the cold Atlantic. Hake line-caught off the west coast. Durrus farmhouse cheese from the Sheep's Head Peninsula. Wexford strawberries at the peak of the season. Finished with indulgent, in-house desserts to close the meal.
These ten dishes will not appear on any other menu, at any other time of year. When August ends, they're gone.
Every summer, Ireland surprises me.
The peas from an Irish kitchen garden that taste like the season itself. The crab from the cold Atlantic, still alive when it arrives. The strawberries from Wexford — the sunniest county in Ireland — that need nothing done to them. The Durrus cheese from West Cork, made the same way it has been for decades.
This menu is built around all of it. Ten dishes that exist only in July and August, celebrating what Irish land and Irish waters give us right now. I hope you taste the season in every plate.
